I have found that pulling the endlinks off my lifted Subaru’s sway bars has freed up roughly 1 inch of suspension travel. I have driven on the roads with no issues at all. But I highly recommend keeping your sway bars and all safety features intact for on-road driving.

I am going to be running a quick disconnect with a cotter and hitch pin, replacing one of the bolts in the back. At the trailhead, I just need to get the pin out and zip tie up the rear sway bar. Non-rubicon Jeep people have been doing it for years.
i would recommend only under a condition, it really only gives you a .45 increase in articulation (in my model atleast). i do run my Subaru without swaybars but before i upgraded my springs to be much stronger / stiffer, the body roll was way to much for the stock springs for me to feel safe driving on roads, if you want to permanently remove them, i would highly recommend getting stronger springs for safety reasons
