think of it like a screw going into wood. The higher the pitch, the further the screw goes in. But it takes more effort. A higher pitch prop will make a boat go faster but accelerate slower…generally speaking. The idea is to get a propeller that is pitched so that your boat’s engine will reach maximum rpm, typically 4600 – 5000 rpm for an I/O. Too high of pitch and you won’t reach that, too low and you can over rev the engine.
