Loved my old Mk2 TT and probably should have kept it. Also owned an 8p stage 2+ s3, you could make the TT properly rapid without a massive amount of money.

To clear the light you might need to calibrate the steering angle sensor then drive it and turn the steering wheel 30degrees right and left

If the sound deadening is damp, soak it with some concentrated fragrance so it will constantly be coming from the carpet
Looks like a proper bargain for a daily driver.
Once you drive it for a short distance most of the lights will go off. Happens everytime you disconnect the battery
