I don't know why he pulled the whole bumper off along with the grill. If you remove just the grill, which is much easier, you'll have full access to the hood latch.
Would this be the same for a 2011 Subaru Outback?

I viewed the video and found it helpful in understanding how the latch mechanism works and how to "approach" getting access. However, removing the entire bumper was not necessary. I simply removed the "vent" to the air filter and detached the inside "bridge" (plastic) piece from in between the grill and the radiator…it's about 3 1/2 feet wide and about 3 inches deep. I then inserted a block to expand the access area to the latch. From there it was a piece of cake to unbolt the latch and do the work on the latch.
