Bleeding procedure is normal. Nothing unusual. Fill system to the cold
level, start engine and keep filling the coolant to the cold level mark for
the next 1-3 minutes, coolant level should be stable, Let engine warm up
and turn on heater. Let engine cool and then recheck coolant level when
completely cold.

I thought the BMW M62 uses Orange coolant ((no not GM DEX-COOL)) ie Zerox
G-05 or BMW orange coolant. Guessing that why your coolant when from blue
to gold due to some left over in the heater core, engine block and other
various places.
