Whichever color you decide will be fine, as long as you use the correct glue. (And do not press with fingertips, leaving permanent impressions.)
Critical is to forget all the retail headliner adhesives. Ask your local trim shop for a recommendation. The cost of the adhesive may seem astronomical, but if you want it to last more than a few months, go with the professional recommendation. You won’t regret it.

The color of the sun visors are universal and are somewhat irrelevant (but a bit annoying) to your choice. In my convertible, I recovered my A-Pillars and header, and door tops to closely match, in color and texture, the dash. It bumped the interior up a few notches. Vinyl cost $50 and glue cost about $75 USD. Suede headliner and pillars would take it up a few more notches.

For the overhead console, you might consider a vinyl wrap to closely match the wood veneer. It doesn’t have to match perfectly as it’s not next to the OEM veneer. I did that except in carbon fiber and you would not know it wasn’t OEM. Unless you were a real Jag nerd. Then it would be presented as an upgrade.

Hello John. I’m rather partial to the grey as I have the nimbus grey in my car, trim code LEG. Like you I have to replace the headliner, but my reason is because a previous owner was a smoker and flicked a cigarette into the roof when it was down causing 4 holes in the liner. I’ve used Auto Reserve Jaguar for parts and have never been disappointed. Sometimes a tad expensive getting them shipped to Alberta but certainly worth it.

Got to go with the gray

Hi John. The original headliner color was Nimbus grey.

You guys pay 20% VAT??? Is that on everything you buy? What is your income tax rate? Been a while since I was in the UK but I recall the VAT being like 7% or something like that.

Def grey headlining with all those grey fittings.

I bought a headliner from eBay in 2018 and it was inexpensive, a good colour match and quality. A lot less hassle than trying to retrim the old one. Still in good shape in my car and also available.
