I heard you can use a 2.8L thermostat housing which is aluminum to replace the failure prone plastic one on the 2.7. My brother had an Audi that leaked more fluids than it kept inside it lol, I did a little research on how to permanently fix the issues

Nice work on the repair and good job using the torque wrench. There is definitely a time and place to use one… you made the right call.
I am a trained and licensed red seal automotive tech from Canada, I see no harm in double or even triple clicking the wrench, as you mentioned as long as you are not exceeding the pressure needed to actuate the torque wrench… always the best practice to (double/triple check your work)…
