They do make convertor harnesses for updating older vehicle stereos, although the stereo shop will often just cut the wires and splice it to the new wiring harness
I have the avalon of this vintage. I'm replacing the speakers. Next is the stereo. It is dying.

Have you ever tried those Bluetooth cassette adapters from eBay?
I used them for years till I sold that car. It had a good radio so why replace it.
Get the 5.0 bluetooth types.
I got a few of them so when one would run out of charge I had another charged and ready.
The hands free part sucked but all the rest worked great.
AMERICAN RADIO in Knoxville TN has never failed me. They can even put a wireless camera to work on the screen of your new head unit.
Just buy the adapter that goes in the tape deck.
I have a 2005 toyota avalon with a tape deck and ended up just buying a bluetooth cassette to get spotify playing in the car system and it works great
If I could help Scotty Kilmers install the new stereo in his car I would drink the shot of whiskey and puff on the Cannabis Cigars with him and get all schmoked up
Pay a few dollars more for a Sony or Pioneer for something more "user friendly" Cheapskate LOL
I've got an '04 Lexus SC430…I'm not touching anything..I like my CD player and cassette deck..it's cool.
This is one of those times you never go Cheap for such an important upgrade 😀

Scotty's gonna kick himself in the butt when he finds out he could have gotten a $10 AUX to Cassette adapter to connect his phone to the tape deck with an aux wire.
