This video will help you replace the engine coolant thermostat. The video is showing a 2017 Suburban, but the procedure is similar for many year and models of Chevy, Cadillac, and GMC SUVs and pickup trucks. Most relevant are 2015 – 2020 Suburban, Tahoe, Yukon, Escalade, Silverado, and Sierra.
Make sure you confirm that the thermostat is the bad component and not the temperature sensor. See the following video to help you isolate between the two:
