PsychOtto says:

My temperature gauge began dropping from normal range in about 10 seconds
to cold range, then it would rise in about 3 minutes to midway again. Then
it would drop again. I read on the internet that the problem could be
anything from bubbles in the cooling system, a faulty fan clutch, a bad
water pump, to a leaking head gasket (which would have been very expensive
to fix). I first replaced the thermostat and then the temperature sensor
with no luck. Then I replaced the temperature sending unit and that did it.
I hope that fixes your problem too!
