I had mine done in my 2000 Buick LeSabre and it took 1 man 4 hours and it was $300. That was 6 months ago. Same color headliner. He did an incredible job.
Why do headliners use foam ? They'd stay up a lot longer if they didn't. How often do you touch your headliner? I have a '02 LeSabre and currently I'm holding the headliner up with these spiral shaped tacks, with clear heads. They have been up for years and to my surprise, not one has fallen out yet. It is currently falling down in front of my visors, so I will be rubbing off the foam and securing it. It does act as a sun screen.
I restored my '66 Thunderbird dual headliners. Not a fun job. And the mooncrater headliners did not adhere and dropped down very fast. So I will be fixing it soon, on the car.

PER THE GLUE: If you have a compressor/spraygun setup I'd opt for using Weldwood Contact Adhesive instead of the 3M 90. I have used Weldwood in the past and it is the best glue to use period. I don't have an air setup thus why I recommend the 90 for the average DIY'er but it's a MUST to coat both sides as discussed in the video.
