Use ratchets when you can because it saves time and it's painfully hard to watch someone using an open end wrench in a video when it's not needed please.

I always thought your comments about not touching the frame from the positive terminal only applies when the negative terminal is connected, which is why you always disconnect negative (or ground) first and connect it last. Is that not true?
